I Heart Vegetables

Dear Mom, 
                     We do not like vegetables. You should have figured this out by now. Your oldest child would throw up his green beans. The second hid his corn around the outside of his plate. He didn't think you would notice when you picked up his plate from the table that he would have a perfectly round circle of corn. Your third child had a complete stand off when it came to vegetables. There were many nights that he won. The fourth, he just keeps chewing & never swallows making you just want to leave the table.  
                   So maybe it's you, Mom. Maybe you need to make your veges a little yummier. Don't cook all the vitamins out of them, just make them taste a little better. When your children are a little older they won't mind eating just plain 'ole vegetables. But until then, show some mercy.

Broccoli with Cheese Sauce

16 oz bag of broccoli 

1 tablespoon margarine or butter
1 tablespoon all-purpose flour
Dash pepper
¾ cup milk
¾ cup shredded Cheddar cheese
1 tablespoon Bleu Cheese Dressing

Cook or steam broccoli. 

In a small saucepan melt butter, stir in flour & pepper. Add milk all at once. Cook & stir over medium heat till thickened & bubbly. Cook & stir one 1 minute over lower heat. Poor over broccoli and serve.

Glazed Carrots

2 - 12oz bags of peeled & cut carrots

1 tablespoon of butter
¼ cup brown sugar

Cook carrots & drain thoroughly.

Add butter & brown sugar. 
Cook on low heat for 2 minutes.

Easy Roasted Potatoes

10 to 12 new or red potatoes

2 tablespoon olive oil or butter
½ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon pepper
1/8 teaspoon paprika

Place potatoes in a greased pan. 

Combine olive oil/butter & seasonings. Drizzle over potatoes. 
Bake covered in a 325° oven 45 minutes. Stir potatoes. Bake uncovered 15 minutes more. 

Baked Sweet Potatoes with Brown Sugar

4 medium potatoes (8 to 10 ounces each), scrubbed

coarse salt
ground pepper
4 tablespoons (½ stick) butter
packed dark-brown sugar

Preheat oven to 475°. 

With a fork, poke potatoes in several places. Arrange on a foil-lined baking sheet; bake until tender, about 40 minutes.
Cut the top of each potato, & push the ends together to make an opening. Sprinkle inside with salt & pepper; dot each potato with 1 tablespoon butter & 2 teaspoons sugar.

Green Beans

16 ounce bag of frozen green beans

4 slices deli ham - cut thick
coarse salt
crushed pepper

Cook green beans for 15 minutes. Drain leaving ½ liquid. Slice ham into small strips. Cook 15 more minutes on low heat, stirring occasionally. Season to taste. 

Cottage Potatoes


Parmesan Cheese

Peel & slice potatoes about a half an inch thick. Melt butter in pan. Lay potatoes in the butter. Sprinkle with Parmesan. Cover & cook for 3 minutes. Sprinkle with Parmesan cheese again. Cover & cook until soft. 
If you burn them, they still taste good.
