1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1 cup Swiss cheese
1 tablespoon all-purpose flour
6 eggs, beaten
1/2 cup half-and-half
1 medium tomato, diced
2 tablespoons dried, sweet basil or 1/2 cup freshly chopped
3 to 6 strips cooked bacon, well drained & crumbled
Preheat oven to 350˚. Coat 8-inch quiche dish with nonstick spray. Combine the cheeses.

Pour over cheese and sprinkle with tomato and basil. Top with crumbled bacon. Bake 35 to 40 minutes or until center is domed and nicely browned. Let stand out of the oven 20 to 30 minutes to allow eggs to set up. Yield 6 to 8 servings.
